Position Summary:
The successful candidate will work with hotel management to promote
and deliver exceptional service. He or she will have the ability to
ensure proper training and supervision of all personnel, to deliver
prompt, courteous service in a manner that complies with Fireside
Food and Beverage standards and company policies and procedures. This
position will have a heavy emphasis on floor presence to ensure
proper standards are being upheld.
Job Requirements:
-Continuously check food quality and presentation from the kitchen.
-Monitor guest satisfaction and comments regarding food and service.
-Be familiar with, and recognize, repeat guests.
-Review reservations on a daily basis, check against front office s
VIP list
-Maintain the physical plant of the restaurant (maintenance,
cleanliness)
-Check uniform appearance
-Tabletops set to standard
-All menus inspected with asst. mgr.
-Constantly inspect tabletops, side stations, and tray stands during
service
-All equipment in good condition and clean
-Lights and music adjusted appropriately for each meal period
-Contribute to the profitability of the restaurant through cost
control effectiveness
-Administrative duties as directed by the Director of Food and
Beverage to
include, but not
limited to: payroll, scheduling, beverage requisitioning, and
inventories
-Run pre-meal standup meetings with the front of house team
-Train the servers on suggestive selling
-Direct servers and floaters to expedite table turns and resets
-Stay on the floor during peak busy times: 6:30am-10am, 12pm-2pm,
5pm-9pm
-Know and adhere to all company policies and procedures
-Have a working knowledge of the union s Industry Wide Agreement, and
the
IWA s
addendum for Fireside.
-Sales manager for the restaurant, handle large parties from inquiry
to
contracting to event
execution
-Coordinate with the chef or sous chef on duty
-Become adept at using Synergy, Medallia, Kronos, and Epitome
-Develop Assistant Managers to get them ready to take the next step
in their
career progression.
Requirements:
Qualifications:
Bachelors degree preferred, but commensurate experience is
acceptable. Ideal candidate will have management experience in a fast
paced restaurant preferably within a luxury hotel setting for a
minimum of 2-4 years. Must posses the following strengths: high
energy, entrepreneurial spirit, motivational leader, proven track
record in managing multiple operations, effective communicator, and
effective in providing exceptional customer service and ability to
improve guest feedback scores. This person must have a high level of
creativity and also have a very good eye for details. Previous Micros
and Open Table experience preferred. Must have the ability to lift at
least 20 Ibs. This position requires you to have a TIPS certification
before starting work. NYC department of health food handler s
certification and knowledge of applicable labor and alcoholic
beverage laws a must. Wine and spirits knowledge strongly preferred.
Must be proficient in Microsoft Office and all of its programs.
